French potato salad recipe

French potato salad is a summer favorite. The potato salad will be best if it is made the day before. A lighter potato salad without mayonnaise.

For 5 people Ingredients:

  • 1 kg Boiled potato
  • red onion
  • parsley
  • 2 tablespoons caper
  • 1 tsp salt
  • black pepper

French dressing:

  • 2 tablespoons Dijon mustard
  • 1.5 tbsp red wine vinegar
  • rapeseed oil
  • olive oil
  • salt
  • black pepper

French potato salad – Preparation:

  1. Peel and cut the potatoes into 1/2-cm-thick slices. Peel and slice the onion thinly. Wrap potatoes, onions, parsley, capers, salt and pepper in a bowl.
  2. Dressing: Mix mustard and vinegar in a bowl. Whisk the oil drop by drop. Season with salt and pepper. Pour the dressing and mix it well.
  3. Cover with plastic wrap and leave in the fridge for about 2 hours.
